Does it change documents without asking?

No. Scans are read-only. Nothing changes until someone approves a fix, and every change can be undone.

How is it different from Copilot or Purview?

Copilot answers from whatever your files say. Purview controls who sees them. Anchoris checks that they’re right, and fixes them at the source.
